1 lb. fresh or frozen crabmeat
1/3 c. chopped green onions
1 c. snow peas
1/4 c. mayonnaise
1 tbsp lemon juice
1/2 tsp coarsely ground black pepper
1/4 tsp each paprika, dry mustard,celery seed, and salt
lettuce leaves or sprouts
in bowl, fluff crab with fork; mix in green onions.
In saucepan of boiling water, cook snow peas for 1 minute; drain and refresh under running water. Set aside 8 snow peas; cut remaining snow peas diagonally into 1/2-inch pieces; add to crab.
Mix together mayonnaise, lemon juice, pepper, paprika, dry mustard, celery seed and salt; mix into crab mixture Mound on lettuce-lined plates; garnish with reserved snow peas.
